"Upon it's release, the Two Towers, while not at all poorly received by the audience, was deemed by few to be slightly inferior to the original film. Major criticisms were aimed at the films slower pace and being less faithful to the source material. However, this extended edition should serve as an amazing treat for audiences. There is more humor in this installment, and it even adds a lot more character development for some characters. It even gives characters like Faramir and Eowyn more layers. The pacing is also much more satisfying and the story flows much better. Gollum is also made ..."

Peter Jackson said in an interview with Total Film, for the release of the Two Towers extended edition, that he was a huge fan of the film Deathstalker II (1987). And, the scene (cut from the theatrical release) of Aragon being served bad tasting stew by Eowyn was a direct homage to a scene in Deathstalker II where the titular character is served bad tasting stew by a love interest and attempts to discard it discreetly.
